Barbecue Season is Here

Enjoying the best summer weather we’ve had in years? Here in the Uk, you can almost hear and certainly smell the bbqs being put into action each evening.

While your steaks are sizzling , put your Halogen oven to great use, preparing those lovely roast potatoes, roasted vegetables and many other ‘side’ dishes to make your barbecue the tastiest one yet!  It will give you time to join in the party.

Suggestions Welcomed, here are a few to start with:

Barbecue Sauce from the deep South : Use on Ribs or Steaks

Make this nice, thick, tomato based sauce recipe which originates in Kansas USA . It is traditional sweetbess with a touch of heat in a dark , thick tomato sauce.  You can adjust the heat by changing the amount of cayenne.

Ingredients: ( For  2 cups )

  • 1 cup ketchup
  • 1/4 cup water
  • 1/4 cup vinegar
  • 1/4 cup brown sugar
  • 3 tablespoons olive oil
  • 2 tablespoons paprika
  • 1 tablespoon chili powder
  • 2 cloves garlic, minced
  • 1 teaspoon cayenne

Method:

Heat the oil in a saucepan. Add the garlic and sauté until its brown. Add all the remaining ingredients stir well and  reduce heat. Simmer for 15 minutes until fully  thickened.

Grilled beef top block (or smaller cuts such as tri-tip or sirloin) is paired with beans, salad, garlic bread, and salsa fresca to make a crave-inducing meal.

Sweetcorn
So simple in the Halogen oven just pop corn on the cob in for 10mins at 200 C. For best results cut big ones in half. Cover in butter or parmesan and serve.
Couscous
Simple, delicous and different : Pour on boiling water , stand for 4 mins then fluff it up with a fork, allow about 50ml per serving.
