Fried Fish Fillets Cajun Style

Ingredients: 

900gram Fish Fillets of your choice

380 gram cornflour

3  eggs beaten

125ml milk

125ml lager beer

3 tbsp  mustard

Tabasco sauce  to taste

1 teaspoon Cayenne Pepper

(Paprika Thyme , Oregano and Onion powder can also be added to the mixture)

Veg Oil  (spray)

2 tbsp salt

1 tbsp white pepper

1 tbsp  black pepper

Preparation: 

  1. Preheat oven to 190 degr C
  2. Whisk  together the eggs, milk, lager, mustard, tabasco (paprika/Onion Powder+Thyme and Oregano) and half of the salt and pepper in a  mixing bowl
  3. Cut the fish fillets into small bite  size  pieces and place into the egg  mixture, coat well
  4. Place in the fridge to  cool for 1 to 2 hours
  5. Mix the remaining salt and pepper with the cornflour, spread onto a large plate
  6. Take the fish out of the egg mixture and dip into the plate of cornflour mix coat well
  7. Spray the  fish top and bottom with oil use the low rack and a mesh grill if you have one
  8. Cook 8 to 9 mins or observe the color and cook until golden brown
