Vegetable Chilli

Ingredients

Mushrooms to taste
2 carrots
2 green 1 red chillies
1 Onion
1 teaspoon Paprika
1 teaspoon Cumin
½ teaspoon Cinnamon
1 tin plum tomatoes
2 garlic cloves crushed
3 teaspoons of tomato puree
some olive oil
1 tin red kidney beans
2 tablespoons of vinegar
1 tablespoon of granulated sweetener/sugar

Serve with Rice and Salad

 

Method

Chop the vegetables finely and fry the onion, garlic and mushrooms lightly, add any other vegatables you want.

Pour the mixture into an oven proof dish, adding carrots and spices

Set the Halogen to 200’C and cook for 20 mins, using the lower rack.

Add the Kidney beans vinegar and sugar at this point, cook for 10 mins on 180’C

Test the carrots are as you like them ( hard/soft ) add another 5 mins in necessary

Serve with rice and salad
