Ginger Beef – Asian

Asian Ginger Beef ( 6 portions )

Ingredients

20 oz lean braising steak cut into small pieces
3  tablespoon wok oil
2 sticks of celery
2 red peppers cored and chopped
14 floz hot beef or veg stock from a stock cube
1 tablespoon dark soy sauce
3cm fresh grated ginger
1/2 teaspoon dried red chilli
1 tablespoon cornflour
2 tablespoon water
7oz suger snap peas halved length ways
1/2 bunch spring onions

Method:

Preparation takes about 25 mins and cooking 1hr 10 mins. Serves 6.

Heat 2 tablespoons of oil in large frying pan on hob fry the beef until lightly browned. Transfer to a casserole dish.

Add the remaining oil, fry celery and peppers until they begin to soften then add to the meat.

Pour over stock add soy sauce ginger and chillies stir gently cover with foil place on low rack.

Set the halogen temperature to 200C  and cook for 50 mins or until the beef is tender. Blend cornflour with water. Stir it into beef add snap peas and spring onion. Cover cook for a further 10 mins and serve with Thai rice.
